Smashed Chickpea Salad

1 can chickpeas (low sodium)
1/3 cup mayo (I use vegan)
1 celery stalk
2 scallions
1/3 cup sweet pickles
1 tbs capers
1 lime (juiced)
Sea salt
Freshly ground black peper
Old Bay Seasoning

Rinse and drain the chickpeas well.

Smash them in a large mixing bowl, leaving some texture. I use a fork, but a potato masher or food processor would work well too. I got rid of my potato masher a few years ago when cleaning out the kitchen and have regrets about it (but not enough to repurchase a new one apparently). 

Chop the celery, sweet pickles, scallions and capers. The sweet pickles were initially an accident but add a wonderful balance to the tartness and saltiness of the other ingredients. I used to add regular homemade pickles and bought the sweet ones accidentally once when I didn’t have any made and am never turning back! They are a little too sweet to eat on their own for my taste but are delicious in recipes.

Mix the chickpeas, mayo, lime juice and chopped ingredients together.

Add sea salt, black pepper and Old Bay Seasoning to taste. Keep in mind the seasoning mix has salt in it so taste along the way.

My favorite way to enjoy this is as a sandwich with lettuce, avocado and tomato on sourdough. Remember to give your avo and tomato some love and add a tiny pinch of salt to them - you’ll notice a difference!
